Not too long ago we embarked on a small but determined mission: to create very tasty food that would appeal to foodies and street fare fans alike, deliver it to their doors, tip our hats and disappear into the night.

Our scheme involved fliers and stealth, threats, and stare downs, solicitor warnings and lots of steely reserve. We left menus on windshields, doorknobs, utility poles, bulletin boards and the backs of a few jackets.

We had a romantic notion that once people tasted our food they would overlook our guerilla tactics and we would "be in business."

Well, a few adventurous types picked up their phones, ordered, and presto! Big Chile Republic was born!

It was an exciting time and a meager beginning. But two years and two babies later we've spread our wings and moved to bigger and better digs. Our new location is 70 Roosevelt Highway in Colchester. The former home of "Junior's Italian Restaurant", across from "Libby's Blue Line Diner."

Come in and taste our food so we don't have to leave fliers on your windshields.
